Chef Carlo Crisci
The Swiss born 56 years old chef with Italian roots, has been behind Du Cerf's success story for the last 20 years.

His parents migrated from Naples before he was born but he keeps his ties with his home. The waiters told us he imports EVOO from his estate in Italy.

Unfortunately, we didn't have a chance to photograph the ingenious man because he left after service to get some rest before night service. But he did come to say hello and meet us during our lunch. Actually, he came outside twice to greed us with his apparent sense of humor.
 
Once I got over that disappointment, I promised myself I’ll make it again back to his restaurant, Du Cerf, because it was truly a wonderful experience of the highest culinary level.

If you are in the Lausanne area he is the man to meet.
